Fresh Spring Rolls
Bursting with vibrant colours and packed with vegetables picked from your garden, these fresh spring rolls are as nutritious as they are delicious. Easy to prepare with versatile ingredients, you can mix and match to suit your preferences.
Ingredients:
8 sheets of rice paper
1 cup butter lettuce from your garden
1 cup red cabbage
2 carrots from your garden
1 large cucumber or 2 small cucumbers from your garden
¼ cup green onions
Cilantro from your garden
Mint from your garden
step 1.
Thoroughly wash any ingredients collected from your garden.
step 2.
Thinly slice lettuce, cabbage, carrots, and cucumbers. Set each aside in separate bowls to make assembling the rolls easier. Finely chop the green onions, cilantro and mint and combine.

Prepare rice paper wrappers per the packaging instructions. Once the rice paper is pliable (but not floppy), move it to a plate and add your filling, including a generous serving of the herb mix. Fold the outer edges and roll the wrapper until it’s compact and looks kind of like a burrito. Repeat with the remaining ingredients.
step 4.
Slice each roll in half. Add your favourite dipping sauce to a small dish and enjoy your colourful summer meal!
